I hate this time of year. Ben pointed out that when the Christmas tree comes down it's a signal that the long dreary winter is ahead of us and there isn't much to look forward to for a good long while. I'm fairly good at keeping busy though the (much too short) daylight hours but by the time evening rolls around, I'm at my wits end trying to think of stuff to keep Sam from destroying the house and driving me mad. That's the time of day when I wish I could park him in front of the tube and let it hypnotize him although I just can't seem to let myself do it. Probably for the best since I imagine before too long I'll be telling him "No you can't watch TV! Go find something to do." Wait, maybe he needs some homework!
One day last week we went outside after dark because it was warm and snowing, perfect snowman snow. We shoveled and then made a little army of very rapidly-made snowmen. But most evenings it's just cold, dark, and miserable. Our friends and neighbors are eating dinner so it's hard to coordinate schedules to do a quick evening visit. Any suggestions on fun stuff to do in the evening on these long and miserable days?

I know, this time of year does suck, especially when it's cold. Trips to warmer places help to ease the boredom! ;-)
Okay, to really answer your question, try simple little crafts. Gluing stuff onto paper, you know, stuff like feathers, googly eyes, that kind of thing. Messy, yes, I would imagine Sam will be most interested in the glue. Have you tried playdoh with him. I can imagine him hurling it.
We've done some clay stuff and it keeps him interested for, oh, 5 minutes at most. Sometimes messy stuff works but if he's tired, it doesn't.
