Brrrr. We've had about 13" of snow although it feels like more because it's blowing everywhere and we're supposed to get up to another foot before it's over. And more wind of course. The wind is what's really making it challenging because we're shoveling the same snow over and over. I've probably spent about two hours shoveling so far today and am categorizing it as exercise so I don't need to wonder why I'm always the one doing the shoveling instead of my big, strong and YOUNGER husband.
Between shoveling sessions I've experimented with a new for me kind of cookies and have to give it two thumbs up although they're more like candy than cookies. I got the recipe from the Smitten Kitchen, and modified slightly because that's what I always do. I was thinking of my father in law as I made them because I'd been making lemon meringue pies for him before he died. I also though of the divinity candy my mom used to make...mmmm, painfully sweet but that is a good thing, isn't it?
Chocolate Meringue Cookies
200 F for about 2 hours
2 egg whites at room temp
1/8 tsp cream of tarter
1/8 tsp salt
1/2 c sugar
1 tsp vanilla
1 c chocolate chips (I put them in the food processor until at least a good portion of the chips were powdered chocolate after I got bored with chopping them by hand)
1/4 c coconut (dried, unsweetened)
Beat egg whites, cream of tarter, and salt to soft peaks. Slowly add the sugar and beat to still peaks. Mix in the vanilla. Fold in the chocolate chips and coconut -- I recommend doing this by hand because I did it in the mixer and had significant meringue deflation. Spoon onto parchment-covered cookie sheets and bake for what seems like forever. Try not to eat them all in one sitting. Slap Sam's hand as he steals yet another cookie.
I could have added a little red food coloring to make them somewhat Valentine appropriate but since we really don't bother with this manufactured "holiday" it didn't seem worth doing.
All in all a pleasant blizzard although I'm not looking forward to digging out tomorrow when it's finally supposed to be over....

Baking cookies! What a great way to spend the day!
We've been busy not only with the driveway but also with the furnace. No, we didn't lose power, but the air intake pipe keeps filling up with snow and shutting the furnace down. We had to open it up and scoop all the ice out of the furnace's electrical box (spooky!) and then melt the rest of the ice out of the furnace with a hair dryer. Twice. So far.
Heard on the news that we are up to 18" of snow so far, and that it is a Burlington record for the month of February. I guess the bigger storms in previous years were in January and March.
